Ingredients

FOR CAKE

  • 5 ounces unsweetened chocolate, coarsely chopped.
  • 2 cups flour.
  • 12 teaspoons baking powder.
  • 14 teaspoon salt.
  • 34 cup unsalted butter, softened.
  • 12 cups sugar.
  • 2 teaspoons vanilla extract.
  • 3 large eggs, at room temperature.
  • 14 cups milk, at room temperature

CHOCOLATE GANACHE FROSTING

  • 18 ounces bittersweet chocolate, finely chopped
  • 12 cups heavy cream
  • 13 cup seedless raspberry jam
  • 14 cup unsalted butter, cut into 1/2-inch cubes
  • 1 pinch salt
  • 12 teaspoons vanilla extract

Preperation

Preheat oven to 375 degrees F. Line bottom of 18 x 12-inch jelly-roll pan with parchment paper; butter the paper. Mix the instant coffee into the water and set it aside to cool. Melt butter, sugar, chocolate in a medium saucepan over low heat stirring constantly until smooth. Scrape mixture into the bowl of an electric mixer.

Add eggs (one at a time) beating well after each addition until thick and shiny, about 2 minutes with mixer on high speed. Mix together flour, baking soda, salt; add to chocolate mixture; mix until blended well. Add coffee/water mixture slowly while mixing on low speed only until combined well with batter. Pour batter into pan spreading evenly; bake for 12-15 min or until top is no longer shiny (cake should spring back when lightly touched); remove from oven onto cooling rack; cool completely then cut in half crosswise with a serrated knife.

Froasting

Place the chocolate pieces in a large bowl. In another saucepan, bring cream and raspberries to boil over medium heat while whisking constantly until just begins bubbling around edges but not yet boiling point (about 3 minutes).

Once it starts showing signs of simmering down remove from heat immediately then pour the mixture into the same bowl with remaining ingredients for about 2-3 minutes before continuing on all its own accord as if someone turned off an electric stovetop—frothing should have thickened significantly already! Add vanilla extract once you think everything has sufficiently cooled enough so there’s no risk whatsoever
